The last month has been full of changes for a lot of us. As the seasons follow this trend, nothing feels better than a taste of home. This congee recipe definitely isn’t the same as Mom’s, but it sure does bring me back; and maybe it will do the same for you. Aside from that, this easy-to-make dish will be sure to fill and warm you up on a cold autumn day.
Kale, White Bean and Chicken Soup
This recipe uses easily obtained and versatile ingredients that keep well, plus it can be refrigerated or frozen for a while — perfect for meal prep! As someone without cooking experience living alone for the first time, this easy 30 minute soup is perfect to make lots of on Sunday night and eat throughout the week. My favourite thing is probably its use of rotisserie chicken, which is an ingredient I can use in several meals at once!
Chicken Avocado Lime Soup
As a lover of avocado toast, this soup is the perfect way for me to continue enjoying power foods heading into the chilly fall and winter months. If you are looking to eat healthier without compromising flavour and comfort, chicken avocado lime soup is a must-try. Most of all, have fun exploring the possibilities – perhaps replace the chicken with some kale (another powerfood!) to make it vegetarian, or enjoy your soup with a hearty side of tortilla chips, sour cream, and cheese.
Butternut Squash Soup
I guarantee that butternut squash soup is in everyone’s top ten favourite soup list. It’s simple to make yet super delicious! I definitely recommend adding croutons on the side, BUT if you’re really looking for something unique, use pizza crusts to dip it in the soup!

As someone who’s been perpetually sick since the beginning of this school year, I find chicken noodle soup to be a great comfort food when I’m feeling under the weather. It’s a familiar taste that warms you up, can be soup-er easy to make, or enhanced with lots of goodies, like in this recipe! In terms of health, studies actually suggest that chicken noodle soup strengthens your immune system and can even help prevent cold symptoms from worsening!
